I had a rare Mother’s Day that we were able to spend at HOME in the morning. I don’t remember the last Mother’s Day that I spent at home, as we are usually at church in the mornings. Jason leads worship full time at our church, and he has been a worship leader for over twenty years. So as long as I’ve been a mama, my Mother’s Day mornings have been spent serving our church, and then we celebrate in the afternoon.
This year was different though.
Due to the quarantine and everything that was going on in our world with the Covid-19, we have been serving our church by broadcasting our church services live. Therefore, it meant that we were able to be home on this particular Sunday morning for the first time in the history of EVER for me.
Since we couldn’t really go anywhere, I requested Rainbow donuts, iced coffee from Lux Coffee, and I made my favorite Southwestern Sausage Quiche the evening before so I could just heat it up in the morning and lounge on the couch. And that’s exactly what I did! This recipe is very simple, and the flavors do not disappoint. It’s easy to put together, takes about an hour to bake, and it heats up as leftovers wonderfully!
I make this quiche anytime I need something savory for brunch, and it’s my go to breakfast quiche. Give it a try! This simple breakfast made the beginning of my Mother’s Day stellar, and I had breakfast to heat up for the rest of the week! WINNING.
